Iekeliene Stange’s Dutch Pancakes With Gouda and Syrup
These are what my friends know me for—my Dutch pancakes with cheese and syrup. I used to eat these with my family. Now I throw pancake parties where I make them for my friends, and we have fun dress-up themes.
2 1/4 cups wheat flour
4 1/4 cups milk
4 medium eggs
1 tablespoon oil or butter
Gouda cheese, grated, for topping
Dutch stroop or maple syrup, for topping
Heat large frying pan over high heat. Mix all pancake ingredients together in a blender or whisk in a large bowl until the batter is smooth and not lumpy. When the frying pan is very hot, add butter or oil and approximately 3 tablespoons of batter. Flip the pancake when the upper surface is dry, and cook for approximately the same amount of time on the opposite side. Remove pancake and repeat until all batter is used.
Place Gouda cheese on half of each pancake, fold, and let the cheese melt. Finish by covering in the syrup, and enjoy!
